椰汁南瓜炆香芋(亦可作素菜)


材料:

芋頭            半斤

圓南瓜        半斤

椰汁            150ml

                2

乾蔥            2粒(素菜可省去)

                500ml

蔥白            1棵(素菜可省去)


調味:

             1茶匙

黃糖         半茶匙



做法:

  1. 芋頭去皮後洗淨切件(大膠手套處理可防止痕癢);南瓜洗刷外皮、去籽並切件待用;
  2. 燒熱鑊下2湯匙油(鑊面塗滿油),放入芋頭和南瓜,以中小火煎至幾面金黃(煎南瓜煎時間可短些,大約3-4分鐘,芋頭側煎多2分鐘),盛起備用;
  3. 抹乾淨鑊,熱鑊下1湯匙油,加入薑片和乾蔥片爆香,放入(3)已煎芋頭件並倒入500ml水煮滾,加蓋以小火煮13分鐘;
  4. 打開蓋,放入南瓜和調味料,加蓋以小火煮4-5分鐘;最後倒入椰汁輕手拌勻,轉中小火煮多1-2分鐘,加入蔥白點綴,即可享用
