南瓜紅豆包心芋圓材料:
圓南瓜 150g(去皮去籽後)
黃糖 60g
木薯粉 72g
糯米粉 18g
紅豆茸 150g
幻彩紫薯包心芋圓材料:
紫薯 300g(去皮後)
黃糖 120g
熱水 約30g
木薯粉 40g
糯米粉 10g
(紫薯餡加入)
油 1湯匙
澄麵粉 3g
(白色粉糰部份)
糯米粉 35g
砂糖 20g
凍水 25g
做法:
- 南瓜、紫薯去皮,洗淨切件隔水蒸15-20分鐘至熟(南瓜見腍身就可先取出,以免蒸太久令水份過多);
- (先做南瓜紅豆包心芋圓)南瓜蒸腍後趁熱隔水並壓成茸,加入黃糖拌勻,再篩入木薯粉和糯米粉拌至光滑不黏手粉糰,(未用時需包保鮮紙防乾);
- 紅豆茸每份分成約6-8g,搓圓備用;
- 把南瓜粉糰切割成8-10g(預備跟紅豆波相同數量),搓圓備用;
- 先鋪保鮮紙,上面放(4)南瓜粉糰,再蓋保鮮紙並用木棍轆扁,移開保鮮紙,放(3)紅豆波在中央並包裹封口,搓圓放在沾了木薯粉的大碗中,在面灑少許木薯粉再拌勻(可防止黏)備用;
- 剩下的南瓜粉糰用手掌輕輕把它轆成長條(若份量太多較難控制,可分開轆成約1cm粗幼);
- 用麵粉刀把它們切成粒狀,在面灑少許木薯粉再拌勻(可防止黏)備用;
- (幻彩紫薯包心芋圓方法)紫薯蒸腍後趁熱加入黃糖並用直立式攪拌器壓成茸(如果太乾可以加少量水才打),留起150g待稍後用;
- 餘下(8)用來做紫薯餡,(建議用易潔鑊)熱鑊下1湯匙油,轉慢火倒入紫薯茸略炒,篩入澄麵粉炒至水份收乾,即成紫薯餡,分成約6-8g,搓圓備用;
- (8)150g紫薯茸篩入木薯粉和糯米粉拌匀,加入約20g熱水搓至光滑不黏手粉糰,(未用時需包保鮮紙防乾);
- 另準備一個器皿,糯米粉先過篩,拌勻砂糖後加入涷水攪至光滑粉糰,混合部份(10)紫色粉糰(不要搓勻)成紫白粉糰,切割成8-10g(預備跟(9)紫薯波相同數量),搓圓備用;
- 先鋪保鮮紙,上面放(10)紫白粉糰,再蓋保鮮紙並用木棍轆扁,移開保鮮紙,放(9)紫薯波在中央並包裹封口,搓圓放在沾了木薯粉的大碗中,在面灑少許木薯粉再拌勻(可防止黏)備用;
- 剩下的紫薯粉糰用手掌輕輕把它轆成長條(若份量太多較難控制,可分開轆成約1cm粗幼);
- 用麵粉刀把它們切成粒狀,在面灑少許木薯粉再拌勻(可防止黏)備用;
- (煮熟芋圓)煲滾水,先把包心芋圓以中小火煮4分鐘,再加入小芋圓同煮多2分鐘至全部浮面,盛起放在食用凍水中待用,放入煲滾糖水中拌勻即可享用。
