七色樹上(素螞蟻上樹)


材料:

素免治肉碎    120g

椰菜                 200g

紅蘿蔔              60g

薑茸                  1湯匙

青椒                  30g

紅椒                  30g

粉絲                  75g


調味料:

辣豆瓣醬      1湯匙


後下調味料:

生抽             1茶匙 

                 1/4茶匙 

清水              120g

麻油              2茶匙 (熄火後下)


做法:

    1. 椰菜、青椒、紅椒分別切粒,紅蘿蔔刨絲;
    2. 粉絲放進溫水中浸泡,泡軟後撈起來瀝乾,切成大約2-3cm的長度;
    3. 熱鑊下油爆香薑茸,落素免治肉碎以中大火快炒至五成,加入1湯匙辣豆瓣醬拌炒;
    4. 加椰菜粒、紅蘿蔔絲炒勻,並倒入後下調味料拌煮至滾;
    5. 放入粉絲,先小火後轉大火煮至芡汁完全收乾九成,最後加紅椒粒、青椒粒炒勻,熄火倒入2茶匙麻油便可上碟。
